Our sweet pastry is short, biscuity and melt in the mouth delicious, it’s so good you might skip the filling! In France this style of pastry is known as Pâte Sablée. Enriched with egg yolks and real vanilla it is the classic pastry for tarts and sable biscuits.
Depending on the recipe tarts often require blind baking prior to adding filling.

The sweet pastry also makes wonderful little sablée biscuits, ideal to serve as an accompaniment to quality ice cream or a bowl of fresh fruits and cream, plus they make a great lunch box treat!
Save pastry trim, wrap in clingwrap and place in refrigerator for 30 minutes, re-roll and cut out small biscuits, bake at 170c (fan-forced) for 8 – 10 minutes.
