Loving the tomato overload for #meatfreemonday on this gorgeous vego tart by @everynightoftheweek made with Carême shortcrust 🍅😍

Repost: “This super simple vego tart has all the flavour and more-ish-ness you expect with some kinda fatty bbq meat thingo. ⠀⠀⠀⠀⠀⠀⠀
A tub of ricotta with a couple of eggs forked through. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt pepper lemon zest, a big bunch of sorrel chopped up finely makes it fresh and lemony. And handful of basil too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
You could fry off an onion.
A tiny garlic clove crushed through raw is good too.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blind bake a shortcrust (thanks @caremepastry!) allow to cool. Add the ricotta mix. Bake til golden and just set. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toss cut raw toms in red wine vinegar and scatter over. Add Parmesan. Pepper. Lemon zest.

This is a great bring a plate. A perfect lunch or dinner with salad. A side to a roast chook with a bunch of rocket. A school lunch box filler. Add some crispy pancetta on top with the toms. Add some chilli. It’s stand alone or ready to accessorise.
